HI. I DID IT AGAIN. It’s Saturday morning and I totally, totally could have written this yesterday, but I took yesterday to write this fabulous Iceland Itinerary (sheep included!) and my wrists started hurting, and since I am nothing but delicate, I needed to go lick my wounds with the greatest mocktail of all time at Rialto Grande.
(PS, the greatest mocktail of all time is their DC Highball, which is just Diet Coke, lime, and bitters, and since I only drink diet soda when I’m swapping it for a cocktail, you can see the appeal)
But I am feeling a huge hit of gratefulness right now, especially after writing the Iceland recap. Icelandic Provisions, one of my longest partners and one of my favorite products, took me and a few other creators to Iceland earlier this month, and it was a total dream. I can’t believe I was lucky enough to experience that country, and I’m excited to share a bit of what we saw with you!
I think the biggest gems of Iceland are the hot springs you can just hike to, which feel so untouched but so alive at the same time. Being among sheep and the most incredible nature doesn’t hurt, either. My itinerary includes things like Geothermal bread-baking (I’m looking to get our guide’s contact info - stay tuned!), said hidden hot springs, places to forage fresh blueberries, and of course, a few touristy spots. But if you’re going all that way, you’ve got to see them!
But outside of Iceland, the weekly round-up!
Outside of being a Travel_Snacks, I think I’m becoming a Soup_Snacks. Baked salads are great, but pureéd vegetables have been CALLING ME.
Shaved Brussels Sprouts Salad with Pomegranate Dressing & Chili Almonds - a long name equals a great recipe, no? I’m just dying to get everyone on the pomegranate dressing train.
Cauliflower Soup with Green Olive Salsa Verde - cozy, cumin-y, comforting and plant-based. Salsa verde makes everything better, and this recipe proves it.
And it’s an incredibly short newsletter this week, but don’t think that’s any lack of love for you! It’s just because I have to run to the dentist. They are pressuring me to do cosmetic stuff to my teeth - which, honestly, RUDE. And honestly, I will probably do it.
