May is notoriously my favorite month. There is only hope in the air, no shadows of summer being too hot or almost over, we’re all still making plans, people are graduating, and newsletters can be short because there is simply too much to look forward to!!
So happy May 31st. I have delightful summer recipes, the full how-to for my summer garden, and oppressively good energy that I’m more than happy to throw onto you.

Coconut Breaded Cod with Cilantro Rice - Ever wanted fish that wasn’t fried that tastes fried? Nestled on top of creamy, zippy coconut rice? All in one pan because summer is summer and we are busy sitting outside? Here you go.
Rhubarb Coconut Drop Biscuits - I saw you impulse bought some rhubarb the other day (great choice). I made you an extremely easy recipe for when you want to use it.
Broccolini Orzo Pasta Salad with Lemon Caper Dressing - We already have commenters on this recipe saying to increase the dressing amount — it’s really that good. Add chicken sausage or vegetarian sausage, and it will fit multiple diets in your house!
Third, a note on Cooking for Fun
In my excitement to post all the wedding cakes, I essentially uploaded eight weeks of content in four days. But could you imagine me holding out all those episodes on you? Horrible.
That being said, there may be a beat between today and the next Cooking for Fun YouTube episode. Hang tight, I have big summer plans, but just know that the newsletter will be bi-weekly until CFF is back!

Oooh that fish dish sounds amazing! I’ll add that to my meal plan this month. Do you think that would freeze well? If not, how many days would it keep in the fridge you think?
The garden looks so good already! What else do you plan to add to it? I’ve also gotten bit by the gardening bug but I’m starting with herbs for now as my light situation isn’t ideal yet. Will live vicariously through you for now!
