Okay, I now have more options for spring
Two really phenomenal recipes, one for the weekday and one for the weekend!
Gooood morning and hello from Florida!!! Truly, one hell of a drug, seeing as for the last three weeks I’ve been sitting in the New York 45 degree weather watching my skin become the color of a ghostly Victorian child, and yesterday I lost my scrunchy in the very teal waves of Jupiter beaches. I will not move here, but I will take any chance to thaw out here.
I’m here for a mini-bachelorette weekend (I call it mini, because we are not going out and the main party will be the spa), and it’s very nice to get some reset R&R. Being in 80 degree weather has also reminded me that yes!! The sun is out most places!! And we are meant to enjoy all the bright, crisp, vegetal and celebratory things!
So in the shortest newsletter in probably a year, here are two banger recipes that I’ve developed as part of a 3-part mini series called “Not Taking Spring So Seriously.” Because I am usually a very serious person but spring is a very unserious drug.
And with that, the weekly round-up!
Charred Lemon Marinated Bean & Snap Pea Salad - What does not look like much is coming in with some pretty stellar reviews from the blog. This salad marinates beans in the dressing, packs them with flavor and then combines them with snap peas, avocado, mozzarella pearls and the two official herbs of warm weather: basil and mint.
Creamy + Crispy Spring Onion Dip - Think of this as a spin on Ina Garten’s onion dip, but we’re (of course) using the whole spring onion. Spring onions are slightly more developed scallions, and a great replacement for ramps if you have ramp fomo. This caramelizes the bulbs and turns them into a creamy dip, then fries the tops into garlicky, crispy oblivion. Need an app for Easter Sunday? Inject them with a little: “wow this is so good???” with this one.
