Ok the heading of this newsletter is misleading - I am not a fall girl. I repeat, I am not a fall girl. Not because I don’t love autumn food (butternut squash is the BEST), or because I don’t like how hype we get about Trader Joe’s seasonal items. I just cry over losing summer. I love summer! I love that I don’t have to remember to bring layers with me, I like picnic culture, and I love that August is usually one big holiday where your boss checks out, you know? I just….I WILL MISS IT WHEN IT’S GONE OK?
But knowing September is coming means realizing that I’ll be craving cozy recipes as soon as a whisper of crispiness hits the air. So for now…I’m in training.
So here’s an ultimate-cozy recipe that combines seasonal broccoli (she’s prime right now!) with a few pantry staples. It makes a highly-nutritious, mega-filling breakfast, because who says oats can’t be savory, no?
Broccoli “Cheddar” Oats
Serves: 1
Cook Time: 10 minutes
Ingredients:
200 grams broccoli (about 1 cup chopped)
2/3 cup rolled oats
1 & 1/3 cup water
2 tbsp nutritional yeast
1/4 tsp garlic powder
1 & 1/2 tbsp soy sauce
1 tsp sambal oelek or 1/2 tsp red chilie flakes
Kosher salt as needed
Smoked paprika as needed
Instructions:
Finely chop up the broccoli, almost as if you are making “broccoli rice'.” Add the oats to a microwave-safe bowl, then top with the chopped broccoli. Pour in the water. It should fully cover the oats but just reach the edge of the broccoli, you want some of the broccoli exposed so it can steam and not get mushy.
Microwave for 4 minutes, check the oats but don’t stir, and microwave for another 1-2 minutes or until the broccoli is cooked but not *moosh*. Stir the oats and broccoli together to combine.
Add the nutritional yeast, garlic powder, soy sauce, sambal oelek and stir. Taste and season accordingly. Top with just a pinch of smoked paprika and enjoy!
Idk how I’m always lucky with your recipes for exactly last time you made the peach toast it was the same day I got some good peaches and this time like I got some good broccoli literally this morning and now I see this delicious savory broccoli oats ughhh can’t wait to make it tonight!!!
