These soft and chewy sticky ginger bars are deeply gingerbread reminiscent, while still being a holiday cookie that is uniquely its own.
The base is a soft ginger crust, while the topping is a honey toffee filled with pecans and dates. If you don’t love dates (or want it a little less sweet), swap the dates for more pecans.You'll still have a buttery, layered bar that is perfect for the holidays. The key is to let it fully cool, that’s how you get nice, clean slices.
