I had a cute little drama moment the other day. The other day meaning today, because I’m writing this on Friday, so at least small brain crises make me feel productive! But if I’ve been off of Instagram stories, or a little more insular, know that I’m sorry. I have not been finding all the time I need to make all the ideas in my head, and while I am glad to be working (us freelance workers call this packing-in work before the winter hibernation), it does make the holidays a bit more stressful. But thank you for being my little safe space on the internet. I look forward to you guys every week.
Now enough about silly old ME (I joked with a friend that the newsletter is just about my hormones and my feelings…which I will try to no longer make true), the restaurant had another banger of a week this week! This time filled with 1) something else to do with your brothy beans 2) cute AF hot chocolates 3) MY PEPPERONI (kind of) SOUP.
So without further ado:
The weekly round-up!
Sourdough English Muffins - a breakfast menu item at Chez Snacks (hereby my restaurant’s official name), and SO easy to make. People always ask me for sourdough starter discard recipes, and this technically is one! Use the starter you’d normally discard when it’s at full activation, and in 12 hours you’ll have muffins ready to go.
Red Wine Honeynut Squash on Brothy Beans - a rich (but easy!) red wine reduction, soft and sweet squash, and perfectly toasted pine nuts. Throw ‘em on your reheated brothy beans and you will feel like you brought a steak house home. Just y’know, without the steak.
Homemade Marshmallows! - with a Tiramisu option AND a Salted Sesame option. It’s so surprisingly easy, and the FLUFF they supply is unreal.
Coffee & Cardamom Hot Chocolate Mix - You didn’t think I’d make marshmallows without making a hot chocolate mix to go with them, did you?
Cinnamon & Spice Homemade Hot Chocolate Mix - This is the cinnamon and spice I was talking about! And when I say spice, I mean HEAT. I drank this spicy hot chocolate with a *blip* of bourbon during the Thanksgiving Day Parade and have never been happier.
AND LASTLY - ‘Nduja (but Tofu!) Soup - I tell people it tastes like pepperoni soup, but vegan. And before you start with me about how both pepperoni and ‘nduja are meat, this soup somehow captures their spiciness, smokiness and richness in one brothy, protein-packed dream. It’s an easy, simmerable weeknight soup, and I want to eat it a million times over. I hope you’ll love it the way I do.
And that’s it for Chez Snacks! And sorry for giving you a little unload at the beginning of the newsletter. I never want to complain, especially when I’m so lucky, but sometimes the hecticness catches up with me!
