Hello from Park City! I’m visiting two very good friends who you may know, Liz Moody and Carina Wolff! I feel like they just host me and I pop over to the West Coast like a jet-setting princess, which is absolutely my luck, because they are both fantastic hostesses. Liz is hosting this time, which means our schedule is packed (in the good way) and I get to try all her fun non-alcoholic bevvies. I’m writing this Thursday night with the hopes that this weekend can be some nice unplugged and recharging hours, and I feel like this week’s summery recipes reflect that. There are some good ones, and I’m excited for you to (hopefully) make them!
Another update is …I’m hiring! I’m looking for a part-time Content & Media Assistant for the summer, the position requires proximity to the NYC/Brooklyn area, and the full job description is in this application link. If you know someone who might be great, drop me a line!
Now to the weekly round-up!
Tomato Peach Pasta - a refurbed video of an old recipe that I love. This is your classic summer tomato pasta, but with a hit of sweetness from ripe peach cooked in, and a touch of Calabrian chili to balance everything out. It’s sneaky good.
Lychee Spritz - the Hugo Spritz is the drink of the summer, but according to the guy at my liquor store, St. Germain is already just half lychee liqueur. So this ombré pink twist on the drink just felt right.
Apricot & Strawberry Polenta Shortcakes - these are truly more corn-cakes, but shortcake just feels more classic and like it makes more sense. Plus you don’t have to shape these on the countertop like classic shortcakes, you just dump everything in a bowl, scoop, and go.
The whole theme of this week is lazy-and-summery, so I hope these fit into your long weekend somewhere. I also see your comments and notes about refurbed recipes, and I’ve been reinstating the favorites! Photography updates to come, which is hence…why I’m hiring. I take the responsibility of running a tiny-food-media-company seriously, so I’m itching to get the blog to its best possible state.
