Hi from my new house!!! I’m not sure where we left off last week…probably with me talking about moving. And how hectic moving is. But also I was absolutely delusional and not stressed about it. And then I moved. And then I got stressed. But now I’m back to normal again.
Kind of.
The thing about moving is that it’s always a bit discombobulating. I told my friend who visited this week that it feels like I’m living in summer camp. My things don’t have spaces yet, I’m not totally organized, and feeling “at home” is … a work in progress. I’m just trying to be kind to myself and take it one step at a time.
The exciting part is I do have a new kitchen (!!) but while it’s a whole new space to explore, I’m a little nervous that I gave up a great set-up. Learning to film in a new space is a challenge that I haven’t had to deal with for three years, and every morning I’m testing the light like a crazy person. So if my videos are a tad delayed, know it’s because I’m analyzing what time my stove gets direct light. (Also…I bought a house with a broken stove. The irony is not lost on me.)
But luckily before this move, I was able to bank some recipes that I love deeply. There’s a quinoa salad that I ate out of Tupperware the entire weekend we moved, a scallop recipe that reminds me why romesco is the perfect sauce, and of course, a big old buttery recipe. Because it’s me. Let’s get into it!
The weekly round-up!
Corn & Quinoa Salad with Pineapple Lime Dressing - my rule of thumb is you can never have too many elements to a quinoa salad, and this one really sings. Don’t skip a salty cheese though, even the Trader Joe’s vegan feta is phenomenal on this.
Seared Scallops with Romesco Sweet Potatoes and Hazelnut Gremolata - Romesco is Spanish sauce, a blend of tomatoes, roasted red peppers, nuts and vinegar which is typically served with seafood. But wow, is it really something when you mix it in with sweet potatoes. If you have a hot date, make them this. Or just make it for yourself because you are a hot date.
Dollywood Cinnamon Bread - If you’ve heard of this bread, you understand the hype. If you haven’t heard of it, just think of this as a brown-butter-cinnamon-roll-monkey-bread-hybrid. Cinnamon brown butter goo pools at the bottom of every fluffy roll, and I love it so very very much.
