Za’atar Butter Bean Salad

Sometimes summer calls for meals that just need to be throw together - this is one of those meals

I can only describe this salad as a compilation of colors and flavors that I love, with a hit of za’atar that keeps everything together. It’s a perfect summer salad - meaning the assembly is quick, the ingredients are cold, and the flavors are crisp.

Use ripe and juicy cherry tomatoes, preferably as red as you can get them, and let the butter beans and pickled red onions bulk everything up. Parsley is there for some freshness, but I wouldn’t be mad at you if you also wanted to throw a little lettuce in the mix!

Prep Time: 15 minutes

  • 1 chef’s knife

  • 1 microplane or rasp-style grater

  • 1 large bowl

  • 1 can butter beans, drained and rinsed
