This week I spent 8 hours on a soup. I know. God gives his toughest battles to his strongest soldiers. Yet we persevere. Consider this your inside scoop on the soup.
Now, I’m trying to be better about having perspective and being grateful for what truly is a wonderful life but THIS SOUP. I need to talk about this soup. I need. to heal.
Let me explain the vision - an oniony, garlicky, honey + chipotle pepper base that simmers until it turns from bright red to deep and dark - then delicata squash for natural sweetness (and because I don’t have to peel it). Finish with kale, vegetable broth and coconut milk for richness. Simmer with all those little dots of oil on top (the best part tbh) and squeeze on some lime. I’m not a food writer, but that sounds good right?? But after making it (twice) there were just…. no layers of flavor. The soup needed some bolstering. Because it’s cold outside! We need layers!!
*Sigh* either way, this soup is now the bane of my existence and the object of all my desires. Bridgerton style. You’ll probably see it in the coming weeks turned into a potato curry…and please be excited when you do, because I’ll be treating that recipe like my firstborn child.

Did I tell you I am in the process of decorating my apartment? Well….I am. With 6 glorious months left on my lease I am deciding to make a change! Be a new woman! Hopefully renew my lease! Here’s the main inspo for the place, and I already see the vision 👏 coming 👏 together 👏
I’ve already gone for it and gotten this amazing thick green couch and paired it with the Target console that everyone seems to have (and for good reason, it’s so affordable and so good?)
And today we’re assembling our Billy bookcases from IKEA. The goal is to have an apartment that I can actually share pictures of….even though right now I’m focusing less on the big decorating and more on buying tiny candles that look like lemons.
And one last question before we go!
I am in my phase of making very-good-but-very-normal cookies, and I’m itching for another flavor to make. I was thinking cinnamon roll? Sticky toffee? If you could have a dream cookie flavor, what would it be?
