This time of year I I'm over the brown butter cookies and other basic faire I make all year long and I want something spiced with a at least two subtly perfect layers of flavor. And while I hate oatmeal raisin cookies I have seen the light texture wise.
Honey lavender cookies? Or maybe something like white chocolate almond and espresso? That idea comes from one of my favorite coffee shops that has a “Tiramisu” drink that’s a basically a latte almond flavor and white chocolate!

Chocolate Raspberry, but on the bright tart side not jam.
I found a wonderful (and ethically sourced) chocolate bar that has raspberry bits AND the seeds. Makes for a really fresh little bite of wonderfulness.
Ok that soup sounds beautiful! Maybe the coconut milk cooled down the chipotle heat and salty layers too much?? I need to know how this soup story ends.
And toffee cookies sound good!! Other ideas: elevated snickerdoodle? apple pie cookie? sweet potato and marshmallow cookie?

Ive used chickpeas in place of heavy cream to finish a vegan potato leek soup. I added them then immersion blended and it lended some richness, thickness, and depth. But last time I made it, the chickpeas completely absorbed all the rich layers of flavor I had developed because I wasn't paying attention and used too many. Mayne a small amount of chickpeas in place of the coconut milk? Though I do love the sweetness cocount milk can provide.
You know those ice cream flavors that are like coffee/espresso with fudgy chocolate and almonds? That as a cookie just sounds incredibly satisfying. And it feels difficult because it’s hard to get the coffee flavor in a cookie, and the nice contrasting texture of chocolate / almond But I feel like if anyone get it right + replicable, it’s you!!

In my mind cardamom is more of a summer flavor, but blackberry cardamom is delightful. I enjoy putting it in my potatoe leek soup as well
