Great q! There are tons of fish native to Alaska (and 5 types of salmon which I did not know!) A few we learned about on the trip were halibut, black cod, sablefish (my personal favorite), king crab (crab's season is largely during winter). But that's just scratching the surface!
Oh and when I say "60%" know that I mean 60% cocoa as the type of chocolate. The measurement for the amount that goes in the recipe should stay the same as the white chocolate :)
You can absolute swap it for 60% chocolate, just know it'll be more of a brownie than a blondie and might be slightly less chewy - but still delicious!
