I’m writing this with a blueberry muffin and iced coffee right next to me, and really, I don’t think I’d want it any other way. (Also, I just discovered Wandering Bear Cold Brew, this flavor is amazing.)
I’ve been keeping things relatively low-key this week, with most of my time spent still working on our house (we moved and installed a fridge ourselves this Thursday…I think I broke a toe), and finishing a very good fantasy novel that surprisingly involved no smut! Proud of me.
It’s always in these summer lulls that I want to cook like crazy, but as I’ve chatted about before, there’s a huge difference between a recipe that’s good enough to publish, and the casual sungold tomato scallops I just whipped up yesterday. I thought Molly Baz’s episode on The Sporkful a few weeks ago was interesting because she really showcased the labor that goes into a recipe before it’s “right.” As I’ve matured as a recipe developer, it has bolstered my idea that I want all my recipes to feel like classics. Ideas that won’t let you down, simple techniques, and recipes you’ll want to keep. Not going to lie, writing a cookbook will give you a crash course in that. Every recipe needs to have a purpose, you know?
But this sentiment means that some of the cook-cook-cooking I do in summer is only meant for my plate (and my tomato addiction), and other recipes are ones for the books. So here is this week’s batch of those! And man, do I love summer.

Skillet Cornbread with Serrano Cilantro Dressing - prepare to see this recipe again at Thanksgiving, but maybe with a little twist. This cornbread is my all-too-easy ideal cornbread recipe, with 5 ears of corn to prove it.
Honeydew Melon with Sumac Sugar & Ice Cream - It tastes like sour candy meets a creamsicle, and I mean that in the best way. You can also use any other melon you’d like, since I was surprised we have so many honeydew haters?!
Crab Salad Sandwiches with Honey Dijon Dressing - The lobster roll’s younger, hot sister! Except it’s cool. Because sometimes you don’t want a hot burger on a blazing hot day.
And I can’t call these new, but they are a staple. I’ll stop talking about them until next July, I promise! But Part 2 of The Classics Series is my Blueberry Muffins. Because I was craving them. And it’s peak blueberry season. So here we are!
