When I saw your video on the beet sandwiches I got so, so excited then my brain raced about all the many awesome ways that probably tastes like. Then I completely forgot that I meant to look for the recipe on your website. Enter your newsletter! I’m still very excited but have now composed myself enough to click the link (having it right there really is a gobsend for excitable goldfish brains like mine) and save it in my own menu plan for the month.

Oop forgot those were there - I just fried them up in a cast iron and ate them with salt and vinegar! Salt and vinegar potato chip vibes

Well, this is fun! And how cute is your handwriting? We plan our week similarly--what are we in the mood for, what is in season, what new recipes have we found (hello Swiss Chard Spaghetti!) , is there anything in the freezer we need to use up, and then we go from there. The next criteria is: will the leftovers make an easy (take to the office) lunch the next day, or will it be a better work-from-home lunch. Lastly, is who is cooking - me or my husband? We both have different talents and skills, and he works from home full time while I go into the office 3x a week. Fridays are non-cooking nights (happy hour nosh!) so no meal planning for that. Saturday is the big shop--farmers market and grocery stores, with little shopping trips during the week to pick up fresh fish, etc.

Ahhh I'm working on this!! You can *try* through amazon, but my publisher is still prepping international links! It will be in the newsletter ASAP though :)

Just checked out your recipe for the date and pistachio bars because I have copious amounts amounts pistachios in my pantry. In one of the comments you said that they wouldn't have enough fat to stay together with pistachios - did you need to make any changes or were they ok just subbing out the walnuts?

I had to pulse them for much longer, and the texture was less smooth than the balls pictured, but they held! Apologies for the outdated comment, they do perform best with walnuts, but I also had pistachios this week and gave it a go!
