What’s the purpose of moistening the figs? Couldn’t they just be chopped up as is in their chewy, dried state?

I find they bake down into a denser, unpleasant texture. But if you don't mind a chewier fig, feel free to skip that step!

Omg. The yuzu ones sound delicious! If I didn’t have a food processor, what can I do to make the butterbeer ones? I only have a stand mixer and a nutribullet.

Also!!! I finally got your cookbook here in the Phillipines! Didn’t have the Walter doodle but I love it still. Excited to cook from it this month!

The fig ginger cookies have definitely caught my eye! And I love the handwritten recipes :) One question about the directions, what do we do after draining the figs? Do we chop and then add to the dough? Thank you!!!

Yes! You can either tear them up before soaking, or chop them after. I find tearing before works best! Then just drain them, squeeze out excess moisture, and add them to the dough!
