Made these last week, and they were incredible. Swapped the cardamom with equal parts nutmeg, clove, and allspice because I didn’t feel like buying cardamom. The chai caramel is awesome!

Justine! Is there a preferable place (for you, revenue cut IDK..) that I should be ordering the book from as an Australian? P.S - Not sure if you bolded "prepare the caramel" for comedic effect but it was -very- funny.

Okay so I saw while in the grocery checkout line. I immediately got out of line to get cardamom as I had most everything else. Instead of using chai concentrate, I just steeped a chai tea bag in 1/3 cup water and that seemed to work well. Overall, extremely delicious. I refrigerated for maybe 15 minutes and then added the crumble. I actually wished I added it sooner as it was already pretty set and didn’t stick on very well. That is the only change I would make.

Book tour!!!!!! I’m a traveling occupational therapist currently in San Jose, so I’d love to go to San Fran to see you if I can! How do I find the details for the tour? I likely won’t have my book by then because I preordered it months ago to my permanent address in NJ, but still excited to meet you if possible! Also… figs in a blanket, hilarious.

These mix everything I love: crumble, pumpkin, chai, bars, caramel! Will have to try. I wonder if I can somehow make an infusion with chai leaves instead of using the concentrate 🤔

Oh gosh okay it could be many things, ranging from your stove to your pan! With this one I'd say don't be afraid of the high heat, but watch it like a hawk. Take it off the heat right after it starts smoking and make sure your butter and heavy cream are room temp. It should get you there!

I’ve used stainless but I feel like the color of the butter never gets dark enough before it starts crystallizing! Is that because I’m not using high enough heat?
