Good morning! I don’t know why, but it feels like February lasted forever, yet somehow we are nine days into March and I have no idea how I got here. The good news about this month though is that our weather slowly creeps into the 50s…where it stays until June…but still, hope is on the horizon! I will see Vitamin D again.
Now, after last week’s novella, today’s newsletter is all about the recipes. But my one rule remains: the newsletter eats first. This springy toast isn’t posted on socials yet, but if you need to inject yourself with greens (and olive oil! And cheese!) it’s ready and waiting for you.
And with that, our weekly round-up!
Pink Focaccia (no mixer needed!) - The kneading of this focaccia is wildly satisfying. And while I put up a poll asking if you all wanted a version of the focaccia that’s a little trickier but stays pinker, 53% of you said “we can move on.” Since I don’t play by Electoral College rules, majority wins. But I promise, this is the recipe you really want, and it comes out light pink all the same!
Flaxseed Crackers - Lovingly called “Flax Crax” by me and my internal team (AKA my manger Lisa, hi!). These are a version of knekkebrød (Norwegian Crispbreads) and they taste breadier and heartier than your just-seed-breads, while still being gluten free if you use GF oats!
Plus, if you want very affordable flax meal, you can use the code JUSTINEGOL for 20% off of this flax, which is already $7.99 (this newsletter is not sponsored, but they are a long term partner!)
Soy Citrus Tofu - a love letter to the end of citrus season, and a really good reason to eat your orange rinds (the reason: it’s delicious). Also, I got this comment this morning and it nearly made me cry so I’m leaving it here:
And a Lemon Honey Snap Pea Toast - Bright, crispy, and made all the better with a rich, peppery olive oil. Get the most herbaceous one you can find. Heaven on bread, or heaven as a salad - whichever you prefer!
Now have the best weekend, please let me know if you make anything, and be sure to get your Vitamin D! Or at least take a supplement. It’s good for the skin.
Until next week!
Xoxo,

The tofu in my fridge that has been waiting for me to feel inspired to cook it just met it’s destiny
I have a box of citrus from my parents that I need to use up and the tofu looks so good!
