This is literally me and all my blocks of tofu. They need at least three weeks of sitting in my fridge before I know how to get to it haha

Made the beet focaccia but used beet juice produced from foil-roasting a whole beet in the oven (which I needed for another recipe!) and it worked great and stayed a beautiful pink color! Halved the recipe successfully and topped mine with fresh sage/rosemary/thyme and sliced shallots. And of course, lots of flaky salt! Absolutely lovely with our hearty vegetable bean soup last night!

Rainy all weekend for vit d supplement it is for me! I just ran out of oranges but I have some grapefruit…I wonder if I can make the tofu with grapefruit instead of oranges🤔

Oooooo ok the peel might have too much pith to be enjoyable, but the juice would work! I'd just add maybe a tablespoon more of brown sugar to offset any bitterness ;)
