I made a modified version last night using a different kind of squash and some leftover coconut milk I had on hand, and tossed in some leftover spinach at the end! It was fabulous and well worth the effort
This soup is delicious! I made a batch last weekend and shared it with my parents. My mom texted me this week to ask, “What is the sweetness I taste?” I told her I thought it was the caramelized squash and fennel. Hope that was the right answer. Congrats on the cookbook; I read through the whole thing on Tuesday night when I got home from work and can’t wait to start cooking through it. Yum.
Hello from the U.K.! Very much looking forward to receiving my copy and not even mad about not being eligible for the giveaway! BUT can you tell me; red pepper flakes in this context, are they spicy? Or bell pepper flakes?
Justine - does the pre-order competition extend to all countries? Or is it for the US only? Would love to have a chance of winning one of the Staub ovens :')
Unfortunately it's US only (for legal reasons, and it makes me SO SAD). I would love to gift you one but it's sadly not feasible with US sweepstakes rules and restrictions.

I am so, so glad you liked it!
Kobucha squash is one of my favorites and I’m all set with ingredients to make tomorrow after my son’s baseball game! So excited!❤️
Wooooo I hope you love it! And I hope the game went well :)
It did and the Georgia weather decided to fill like Fall! Double win!🤍

This soup sounds wonderful, and I hope to make it. I also love your "nduja" soup and your plant-forward approach to cooking. Good luck with the book!
I love kabocha squash. Your soup looks and sounds absolutely wonderful. Looking forward to trying it!

The spicy kind! I find they balance the richness, but you can halve the amount if you like!
Thank you - I didn’t want to pick the wrong kind (they’re not called pepper flakes over here so was making sure!)

Understood! I work in the music business and often than competitions so totally understand the legal red tape ✂️. Thank you for the reply :)
Just texted myself this recipe — I don’t see enough kabocha squash soups!
It's truly an unsung hero of squash imo!
