Some new takes on fall chilis and soups! I love a good sweet potato chili or butternut squash soup but need some new staples

More easy, cozy dinners for weeknights using squash or pumpkin! Maybe even a pasta dish? Thank you!

I was just in Ireland and on two occasions had the most delicious puréed soup. Both had a butternut squash base and I remember a mention of carrot, coriander, ginger. So I have soups on the brain, and would love to uplevel my basic butternut squash bisque with some new herbs/ingredients if that speaks to you!

Soups!! Especially ones with layered flavors, not just pure fall/winter heartiness.

The second the weather cooled down I got a violent craving for pot pie that has not subsided. Would love to see a jazzed-up pot pie!!

omg ok it's not a pie but I have a tart coming tomorrow that is HEAVEN. But also a vegetarian pot pie now sounds like a November DREAM.

I always crave roasted root vegetables and start making giant batches of them in the fall which I usually don’t finish before they go bad. Would love some new ways to use them.

I’ve been craving warm beans, like the brothy beans! Or, the fall equivalent of a bean salad. Also marinated tofu?

Soups, people may say it’s pumpkin spice season, but let’s all be real, it’s soup season. Anything one pot has my heart, and I love the combinations you make, so I’m so excited for what’s next!

Autumnal curries??

Breads for beginners?

Maybe something like trader joe’s cheesy mashed cauliflower?

Possibly a low-carb or keto-friendly soup?

I’m sure whatever you come up with will be spectacular. Loooove this newsletter! Thank you Justine!!

I also feel like typically summer meals are quicker and easier and fall/winter are a bit more...in depth. But am I the only one who stays in AND gets lazier?! So maybe some easier but fall/winter meals?

(all your meals are typically easy anyway but that's all I have since everyone else had such great ideas!)
