I was converted to eggplant a few years ago and now spend every summer spreading the good news. Loved seeing this eggplant recipe from you, looks amazing!

Abra Berens in her book ruffage has a recipe that grills/roasts whole eggplant and blends it into a smoky pasta sauce - that was the turning point for me! Fresh herbs and mozz help too!

Ok sooo..

First of all THE CRISPY RICE WITH TOMATOES LOOK PHENOMENAL!! Well I loveee crispy rice and I absolutely adore tomatoes in all forms so that sounds like a match made in heaven😭
